Ingredients:
2-4 ripe bananas, mashed (This is a good way to use overripe bananas that have been put in a freezer. Simply let them defrost, remove the peels and add to the bowl.)
4 Tbsp melted butter (May be substituted with Canola or vegetable oil.)
3/4 cup sugar
1 egg
1/4 tsp salt
1 tsp baking soda
1 and 1/2 cups flour (May be substituted with a gluten free 1 to 1 flour.)
3/4 cup chocolate chips
Directions:
Lightly grease bread loaf pan or muffin tin.
Preheat oven to 350 degrees.
In a large bowl, combine mashed banans with melted butter and sugar. Mix well.
Add the egg and beat well. Sprinkle in salt, baking soda, and flour.
Then, gently fold in chocolate chips. Be careful not to overmix.
Pour into loaf pan or muffin tins and bake for approximately 30 minutes until golden. It's okay if it is not fully set in the middle of a loaf tin. It is tastier a little under baked than over baked.
