Quiche Recipe

quiche

2 - 9" frozen pie shells (may be gluten free)
2 Tbsp butter
1 whole onion chopped
For each pie: 1 cup any combination of the following special ingredients:

  • canned artichoke hearts
  • sauteed or roasted asparagus
  • sauteed or roasted broccoli
  • mushrooms (canned or fresh)
  • spinach (frozen or fresh)
  • canned tuna
  • fresh or canned crab meat
  • cooked bacon bits
  • ham


2 cups grated Swiss or cheddar cheese
3/4 cup milk
2 Tbsp dried parsley
2 Tbsp flour (wheat or gluten-free)
1 dash garlic
1/2 tsp salt
3 eggs
1 tsp dried thyme
1 tsp dried cumin
1 tsp dried basil
Paprika

Chop and saute onion in melted butter. May cook to carmelized state for added color and sweetness in the final dish.

Chop the special ingredients into bite size pieces. For fresh baby spinach, chopping is not needed.

Layer the onion, special ingredients, and cheese in each pie shell.

In a medium sized bowl beat eggs and add remaining ingredients. Stir well and then pour half of mixture into each pie shell.

Sprinkle paprika on top.

Bake at 350 degrees for 30-45" until set (not runny in the middle).
