Makes about 4 servings and takes less than 15 minutes to prepare
Ingredients:
1 small shallot
Juice from 1 small lime
1/2 teaspoon salt
3 medium avocadoes
Dash of pepper
Dash of chili pepper (dried) or a squirt of your favorite chili sauce (optional)
Directions:
Mince the shallot.
Halve, pit, and peel the avocadoes
Combine the shallot, lime juice, and salt in a small bowl and set it aside while you mash half of the avocado with a fork in a medium-sized bowl.
Cube the remaining avocado into bite sized pieces and gently fold it into the mixture in the medium-sized bowl.
Gently fold in the chili, if desired.
Serve with tortilla chips or sliced raw jicama or as a garnish for sandwiches with your choice of meats and vegetables. For example, it adds flavor and creaminess to a chicken, lettuce, and tomato sandwich.
